I had really good intentions for lunch. I had planned a bed of mixed greens with leftover Vegetable Timbale on top. Then I got a lunch invitation that I just couldn't refuse! So....I warmed up the leftovers and had that before I left for lunch. We went to Olive Garden and I ordered a salad with just romaine and onions and vinegar and oil dressing. I had hemp seeds and pumpkin seeds in my purse that I added to the salad. They brought one of those huge bowls of salad and I ate the whole thing!
That reminds me. I saw a good joke on Facebook the other day, posted by Engine 2 Diet.
How to tell if your salad is big enough:
1. When you take it out at work, people ask you who else is joining you.
2. Regular salad bowls? Please. Your salads need a large mixing bowl to fit everything.
3. If you went to Whole Foods and got the same salad from the salad bar it would cost you at least $30.00.
4. Your friends regularly tell you "There is NO WAY you can eat all of that!"
5. 10 minutes in to eating your salad, you have barely made a dent.
I can relate to all 5! At lunch, my lunch buddy was a bit surprised that I ate the whole bowl. I really need one of those bowls from Olive Garden...
Just in case you are eagle eyed, you may have noticed that the picture of the salad doesn't look quite like the rest. I finally forgot to take a picture. Well, kinda. It's not the first time. I confess. I've forgotten before, but I've always had another picture of the same meal, or in the case of yesterday's apple, I just ran to the kitchen and took a picture of another! Today was unrecoverable. Oops.
Dinner was interesting too. On the way home, Lindsey declared that she wanted tacos for dinner. I had ground chicken in the freezer. It was a test for a new veggie and I wanted to test tomato, so I figured that salsa would work for that. The picture looks kinda nice. The only problem is that my homemade tortillas didn't work out so well today.
They were dry.
They broke.
Oops. Again. So, that pretty plate got turned into a messy taco salad. Lindsey did the same and she insists I share the picture of her half-eaten dinner.
She's pretty proud of the fact that she had so many veggies on her plate without protest. We're making progress.
I'm proud of the fact that I managed to make a "plan" meal, serve her the same thing, and have her like it.
Score one for mom!
It's hard to follow the menu's exactly because they often call for foods I didn't pass. Sometimes an option is listed, but that option is also usually one I didn't pass. This is especially true for snacks. The only two snacks I'm sure about is a piece of fruit or hummus and carrots. Most of the snacks are calling for rye crackers or almonds (sometimes almond butter.) I haven't passed either of those.
I also wasn't a saint yesterday. I had wheat twice, and I haven't tested it twice in a day. I ate a bite of a breadstick at Olive Garden and had one of their chocolate mints. I also put sour cream on my dinner since I seem to tolerate milk ok. Is the weight gain from any of those, or from the salsa?
I have no idea. After a rest day, I'm going to retest tomatoes and keeping all those variables reigned in.
