Coconut milk

I'm so excited to share my first recipe with you!  It's actually so easy that you can hardly call it a recipe.  It's more like a how to.  If you can boil water, you can do this!

I start by boiling four cups of water.

Then add half a bag of unsweetened coconut.  I use the stuff you get in the baking aisle.

Then wait for a while.  I really can't tell you how long and I don't think it matters!  I forgot about it.  No need to stress over how long, but I would wait at least 10 minutes.

Then load it in the blender and let-r-rip!  Seriously, be careful.  Hot liquids in the blender can be dangerous.  I like to put a dishtowel over the top and rest my hand on top when I start it, just in case.

Then put a fine mesh strainer on top of a pitcher and strain.  (You may wish to adjust this step.  I like to have a bit more body in the coconut milk, so I use a metal strainer.  If you want it thinner, then layer in cheesecloth or a flour sack towel.)

Then  pour into containers and you're done!  It's really that easy!

I keep it in the fridge and it does separate a bit.  I just shake it up and it's back to normal.  Now, I just need to think of something to do with the left over coconut...
